What defines an ideal restaurant? For most, it’s a combination of exceptional food, a warm and cozy atmosphere, selfless hospitality, a consistently clean and hygienic environment, and the simple convenience of parking.
At Walnut Bistro, this ideal is brought to life through their guiding principle: “तपाइको खुशी, हाम्रो उत्सव” (Your Happiness, Our Celebration).

Walnut Bistro is a premium restaurant in Panipokhari, Kathmandu, known for its diverse menu, innovative offers, and selfless hospitality. It has set a new standard for dining experiences in the city.
Founded in 2019 by Aakash Poudel and Bishnu Bhandari, Walnut Bistro has carved out a significant place in Kathmandu’s dining scene. Aakash Poudel, the CEO and Managing Director, is also an accomplished filmmaker behind critically acclaimed works like Kathaa 72 and Aaina Jhyal ko Putali. He sees a direct parallel between his two passions.
“A restaurant is like a film,” Aakash explains. “Every element—the food, the ambience, the cleanliness, the quality—plays a role in telling a compelling story to our guests.”
This perspective stems from a long-held dream and a belief, formed during his time in the UK, that a restaurant should be a place to share life’s moments, both joyful and somber.

Aakash observes a shift in modern dining culture. “Today, people seek more than just a meal; they seek a memorable experience and value. We honor this by providing selfless hospitality—treating our customers with the same unconditional love and care a mother showers on her newborn without any expectations.”
He simplifies this philosophy: “Hospitality isn’t rocket science. It’s about doing everything from the heart, selflessly. My team is my family, and they embody this spirit completely.”
This commitment extends to an often-overlooked detail: impeccable cleanliness. “We once overheard a customer remark that our washroom was the cleanest they’d encountered. That resonated with us,” Akash shares. He illustrates its importance with a simple analogy: “Imagine you’re enjoying a plate of momo. After eating seven pieces, you visit a dirty, smelly washroom. The unpleasant odor will likely ruin your appetite for the remaining three. This is why hygiene is paramount. Just as you cannot cook great food in a dirty kitchen, you cannot fully enjoy a meal in an unclean environment. The best food is always born from the cleanest kitchen.”
This focus on the complete experience—from the heart of the service to the spotlessness of the kitchen—is what makes Walnut Bistro more than just a restaurant; it’s a destination built on care and consistency.
A Team Built on Trust and Talent
The success of Walnut Bistro is powered by its dedicated team, who are the true pillars of the business.

Leading the operations is General Manager Rakesh Dangol, with over 15 years of distinguished experience, including roles at high-profile establishments like Little Lamb Restaurant and Sofitel Palm Dubai, beginning his career at the Radisson Hotel in Kathmandu. Rakesh is the operational backbone of the restaurant. “If an American groom has a best man, I have Rakesh,” Aakash says. “He is a passionate, skilled, and quick learner who handles all operations with expert care, allowing me to focus on business strategy, branding, and marketing.”
In the kitchen, the culinary vision is brought to life by Executive Chef Krishna Dangol, who boasts over 25 years of international experience, including significant work in South Korea and executive roles at Pabera Hotel and Hotel Kutumba. Chef Krishna is both passionate and profoundly creative, excelling in preparing diverse cuisines while maintaining the highest standards of taste, hygiene, and presentation.
“The greatest strength of Rakesh and Krishna is that they are visionaries who understand food as an art and the business from the soul.”
This spirit extends to the entire family—from supervisors and service staff to the kitchen and housekeeping teams. They are the soul of Walnut Bistro. “My duty is to support and protect my team, ensuring their happiness. Their duty, in turn, is to ensure our customers’ happiness. When our customers are happy, everyone succeeds.”
Growth is fostered through regular self-assessment, clear Standard Operating Procedures (SOPs) that help everyone understand the mission, and Key Performance Indicators (KPIs) that motivate the team to work smarter and strive for continuous excellence.
